Kala Namak salt, or black salt, is a variant of pink Himalayan salt, which has a surprising hard-boiled egg aroma. It is produced by craftsmen in northern India by melting pink salt at high temperature, and adding sulfur-rich harad seeds to it. The heated salt is then cooled in ceramic jars, stored and aged before being sold. Kala Namak black salt has an aroma that can be described as sulphurous. It is often likened to the smell of boiled eggs. Like all salts, black salt is mainly composed of sodium chloride like table salt and other culinary salts. Black salt also contains hydrogen sulfide, responsible for the smell, and iron sulfide, which gives it its color. Its aroma combined with its salty taste is good for giving a salty note to dishes. Its best known use is in Indian street food known as chaat masala, but Kala Namak salt is also used in chutneys, salads or the popular Raitas. In Ayurvedic medicine, black salt is used to make an herbal elixir. Kala Namak salt can also be used in vegan preparations and is known to make tofu taste more like eggs.
