
Muscisca di Maiale is a product of yesteryear that revives the ancestral habit of shepherds during transhumance. Our artisan charcutier Francesco revisits this custom with a modern twist, using strips of dried meat cut from the ham and pork tenderloin. The meat is particularly lean and the chew is very firm. It is carefully braised and marinated before drying, with chilli and fennel: flavours typical of our country. This charcuterie is ideal as an aperitif.
