Pancetta is a great classic of Italian cuisine. Along with guanciale, it is the flagship ingredient of the emblematic “pasta alla carbonara”! Nicknamed “Italian bacon,” Pancetta is made from pork belly. The rind is removed from the breast, salted for about 7 days, then left to dry for about 7/8, rolled, stuffed into a natural casing and then matured for an additional 45 days. The Pancetta Arrotolata (rolled) is gluten-free and is available in pieces of approximately 1.9 kg with a shelf life of 6 months. ****Your orders must reach us on Tuesday before 12:00 p.m. for delivery from the following Wednesday in refrigerated transport at 4°.
