
Porchetta is prepared with a deboned suckling pig then stuffed with its flesh from the belly, before being tied up and slowly roasted until the skin is very crispy. Ours is flavored with pistachios, almonds and fennel: aromatics characteristic of our terroir which is Gargano. It is often eaten in panini, at merenda time (“snack” in Italian) in Italian agricultural areas. She can also fry it, with a drizzle of OLIO DI SERRA, a pinch of garlic and a little fennel or tomato.
