Capocollo is similar to what we know under the name "Coppa" and which we find in Corsica and Northern Italy. Produced only with Italian meat with guaranteed supply chain certification. Lactose-free, gluten-free and above all without added nitrites and nitrates. Our capocollo is made from the neck part of the pig. Salted and seasoned with pepper, spices and herbs, it remains in brine for about 12 days and is massaged daily. It is then washed with vincotto, stuffed into a natural casing, closed with the classic "a chiappo" ligature, lightly smoked with olive wood, left to dry for about 8 days and, finally, matured for a further 60 days. Capocollo is gluten-free, lactose-free and nitrate-free. It is offered to you in pieces of approximately 2.2 kg, vacuum-packed with a shelf life of 6 months.
