In this pot: French basil, Italian parmesan, olive oil (origin in Spain or Tunisia) and cashew nuts. The little extra: you won't find any whey. Present in most pestos on the market, its sole purpose is to thicken the preparation at low cost. •A French basil resulting from a long-term partnership. Le Coq Noir has been working with Darégal, a French basil processor, for 30 years. The latter collaborates with independent farmers on long-term partnerships (often intergenerational) and supports them on a daily basis on their production method. The basil harvest is also done by their own employees. •Why did we put cashews in our recipe? The original recipe includes pine nuts, which come from far away, often from China. The closest pine nuts come from Spain, but they are very expensive, especially since they are shelled by hand. We chose to use cashew nuts because they provide a creamy and unique recipe. Very often, cashew nuts are grown in Africa and then sent to Asia for shelling. Our cashew nuts have not crossed 3 continents to land in our pesto: they are produced and shelled in Vietnam. They are then sent by boat to France. Producers are supported to produce sustainably in organic farming, and the cashew nuts are traced to the plot.
