The marinade has its origin in the conservation of fish in an acid medium such as wine vinegar; later paprika was added for its fungicidal properties and garlic for its antibiotic properties. We wanted to give the potatoes that flavor so widespread throughout the Mediterranean that accompanies fish with a mixture of vinegar, sweet paprika, garlic and onion. The result is a fried potato with a fine and elegant marinade flavor in which a general vinegar flavor predominates with slight nuances from the rest of the mentioned ingredients.
