
This exceptional vintage of extra virgin olive oil is made with only the finest olives hand-picked from the Galantino family's "La Fenice - Coppa Malva" estate in Trinitapoli. It is obtained using the ancient method of "affioramento" (surfacing), which consists of manually collecting a very small percentage of the oil (about 2 to 3%) that forms spontaneously on the olive paste with the first cold pressing. Dr. Galantino controls every phase of the production process from the hand-picking of the olives to the rigorous organoleptic examination before bottling. Each year, only 5,000 numbered bottles of this "Gran Cru" are produced.Its aroma and balanced flavor, combined with its very low acidity, make it an exceptional oil for raw condiments.
