Panch Phoron (mild)

Panch Phoron is a whole spice blend originating from the Indian subcontinent, used widely in the cuisine of Bangladesh, Eastern India Southern Nepal. The name literally means 'five spices' in Bengali. Panch Phoron is typically fried in oil or ghee, causing them to 'pop'; this technique is known as 'tempering'. Then, other ingredients are added to be coated in the spices. It's the perfect way to begin a curry, tempering the spices this way, then adding finely diced onion to allow the flavours to mingle before adding the rest of the ingredients. For a twist on the classic, try sprinkling over potatoes before roasting.
