Voantsy Perifery is a wild pepper that grows as a vine in the humid tropical forest areas of Madagascar. Not very spicy but very aromatic, it has notes of fresh earth, subtly woody. This pepper is used in all dishes even if its main use is to spice up meat dishes, mainly cooked red meats or in carpaccio but also white meats and poultry. It is perfect for giving character to sauces: to optimize its flavor, you must let it infuse in the sauce so that it rehydrates. Store in a cool, dry place away from light and humidity.
