It is a wholemeal flour that derives from the single variety of durum wheat "Saragolla": it has a good supply of proteins. Contains gluten. MATCH Suitable for direct and indirect doughs and with sourdough, with hydration between 65% and 75% and maturation up to 18/24 hours at a controlled temperature. Ideal for all types of medium and large sized bread. Also excellent for preparing pasta. STORAGE Store in a cool, dry place away from light sources. Best before 3 - 6 months
