This Arabica coffee comes from the Sigri plantations, located in the western part of Papua New Guinea. Only red and completely ripe cherries are selected. A fermentation process that lasts 4 days follows, interrupted every 24 hours by a washing. This creates a unique flavor, with slight acidity and an intense wild taste. Roasting with cherry wood gives us a sweet and very balanced coffee in which we can see notes of dried fruit, gingerbread aroma, spices and honey.
