Tsukudani is an ancient Japanese recipe. Bord à bord interpreted it with the royal kombu of Brittany. During a long cooking in the soy sauce, the seaweed confits and concentrates the flavors which are characterized by powerful and deep notes: a small spoon is enough! It is a flavor revealer.
