Brief description of the winemaking and aging process: Fermentation with selected yeasts at controlled temperature (24°C) takes place in a stainless steel winemaker with daily light breaking of the cap of marc, at intervals or continuously, by internal rotation of the same. The aging of the wine is in wood for 24 months plus an additional 6 months of refinement in the bottle. Drying: Always using the natural method in crates and racks in well-ventilated rooms with periodic checks on the health of the grapes and pressing depending on the vintage in early or mid-February. Soil type: Limestone. Food & Wine Pairings: Particularly interesting with spicy cheeses and dry pasta desserts. Also ideal with dark chocolate (max. 70% cocoa). Colour: Intense ruby red colour. The nose: Aromas of red fruit jam and spices. In the mouth: The taste is round, warm and enveloping with a typical bitter aftertaste due to the type of soil and very persistent on the finish.
