Heart of the vintage, indigenous yeasts (FA) and bacteria (FML). No refrigeration or filtration to preserve the aromas specific to the wine and keep the lees fine. Éaging: Minimum 8 months in stainless steel vats on lees which provide aromas and depth. The wines have time to enrich, rest and clear up naturally. Blend: 54% Chardonnay, 46% Meunier. Aging: 8 years in bottle on fine lees to give the aromas time to assert themselves and soften. Dosage: 0.0 g/L, none Disgorgement: 07/13/2021 Tasting: pale gold with pretty pink reflections, brilliant, subtle, fresh and intense nose, a little spicy. Beautiful ring of effervescence, fine bubbles. Fresh, tangy palate with a slightly kumquat pink grapefruit, enveloping, straight, complex to finish with a beautiful, slightly salty and milky crunch. Nice length. Pairing: Fleshy hazelnut-flavored oysters, manigodine-type cheese or fragrant summer sheep's tomme, not too dry, poultry in sauce and artichoke compote.
