
Terroir: Côte de Sézanne. 100% Pinot Noir from places called “Le Larry” and “Bezutelle” located in Allemant: 40-year-old vines facing south and clay-limestone soil which favors aromatic wines. Plots worked using a “natural” method. Harvest: Manual. Maturity of 11°2. Vinification: Plot, Heart of vintage, indigenous yeasts (FA) and bacteria (systematic FML), to avoid the addition of sulphites and favor more supple and balanced wines. No refrigeration or filtration to keep the fine lees which will provide aromas and substance. Éaging: Minimum 8 months in vats on lees. The wines have time to enrich, rest and clear up naturally. Blend: 100% Pinot Noir - Blanc de Noirs. 100% 2016. Aging: 5 years in bottle on fine lees. Dosage: Extra-brut 4 g/L Disgorgement: 05/10/2023 Pairing: Monkfish casserole with saffron cream and roasted mango. Soft, washed-rind cheese (Langres, Livarot, Maroilles).
