Raw milk crott

Crott Valchiavenna is a "local" raw milk cheese, produced according to the ancient dairy tradition of Valchiavenna. The Alpine cows, raised in this mountainous area, feed on green fodder and hay, giving the milk unique characteristics. Gildo Formaggi, with his experience in the production of high quality cheeses, works with whole cow's milk, freshly milked and still warm, to preserve the precious bacterial flora according to ancient rules handed down over time. The result is a cheese with an unmistakable flavour, with the name printed on a plate at the time of production as a guarantee of its authenticity.
