Hulled millet is a naturally gluten-free grain, making it a great option for those with allergies or intolerances. It easily replaces rice, semolina or quinoa in your recipes. Its subtle taste allows it to be used in hot dishes such as gratins or salads, but also in desserts such as porridges or cakes. Preparation tips: rinse the millet in cold water. Once rinsed, place it in a saucepan with twice their volume of cold salted water. Bring to a boil and simmer for 20 minutes. When all the water is absorbed, leave to swell covered. Allow 1 volume of millet for 2 volumes of water.
