Millet easily replaces rice or semolina and can be cooked in savory recipes as well as sweet ones such as desserts or porridges. Preparation tips: rinse the millet in cold water. Once rinsed, place it in a saucepan with twice their volume of cold salted water. Bring to a boil and simmer for 20 minutes. When all the water is absorbed, leave to swell covered. Allow 1 volume of millet for 2 volumes of water.
