Atlas Olive Oils, our parent estate, hand-cleared 1 million square metres of stone to create an oasis where 300,000 arbequina and dahbia olive trees now thrive under fierce 50 °C days and frosty nights. This daily stress triggers a naturally high level of antioxidant polyphenols while keeping the free-acidity of our oil below 0.2 %.
