The fertilizers are natural and not synthetic fertilizers, pest control is done with physical traps and to combat weeds we use flocks of sheep and goats. <sWe have the line of Extra Virgin Olive Oil, Not Organic, but it is also an olive oil obtained directly from olives and only through mechanical procedures.
In this section we also present our green oil or the so-called pure green olive juice, marketed under the registered name: Aroma Verde. This oil is produced during the month of October. It is well known as first pressing oil. And this is because it is the first olive to be pressed. To do this, it must meet a series of organoleptic qualities of maturation and color. These properties give it a special touch, both in flavor and color. And it is unique, because due to the state of ripeness in which it is harvested (at veraison) there is a lot of chlorophyll in the olives and this gives it a special green color. This chlorophyll degrades over time, naturally, by the simple laws of nature, without any external manipulation. Oil with a unique flavour, to eat raw or for salads and dressings.
This green oil is sold filtered and unfiltered. Unfiltered oil contains solid pigments and is highly accepted and sought after in southern Spain. Our elders taught us and passed on to us the flavor and health benefits of this type of oil. And we continue with this legacy.
Filtered green oil does not have these small solid pigments, as it has obviously been filtered, but it retains the same flavour.
