-Anise Spirit in Mediterranean Tradition - Made with anise, coriander, licorice, and other herbs - Classic recipe from Piedmont - Served with water or as a cocktail ingredient - Produced by Bordiga 1888 in Cuneo, Italy Bordiga Pastis – Anise Spirit with Mediterranean Roots Pastis is one of the classic anise spirits and is traditionally diluted with water. The term comes from Occitan and means “mixture”. In France, Pastis originated as a reaction to the ban on absinthe in 1915. The Italian version of Bordiga is based on its own approach of herbs and spices. Production and Botanical Ingredients Bordiga Pastis is made with anise, coriander, licorice, and other aromatic ingredients. The recipe does not contain any colorings and is produced using traditional methods without centrifuges or ultrasound. The distillates and infusions are produced in-house and clarified through natural paper filters. Use and Serving Method Pastis is served with cold water in a ratio of 1:5 to 1:6. When diluted, the louche effect occurs: the clear liquid becomes cloudy and milky. In addition to the classic serving with water, Pastis is also suitable as a component for long drinks. Combinations with cola lemonade, bitter lemon, orange juice or sparkling wine are common. Variants with mint syrup, grenadine or barley water are also known.
