Bonito, Sarda sarda or Sarda chilensis, is a cousin of tuna and mackerel. Often confused with tuna because of its shape, its flesh is more tender and its taste finer. And we are proud to have (re)localized traditional artisanal know-how.     A local approach. Located 6 km from the Criée de Saint Jean de Luz, our supply is wild (fish), organic and local. All our ingredients are sourced less than 250km from our workshop in Saint Jean de Luz.     Committed to a zero waste and zero plastic approach, our packaging is 100% recyclable (and our cardboard boxes recycled).     Our recognitions: We are a member of the Culinary College of France and recognized as a Quality Artisan Producer. We were awarded an Epicure d’Or prize in 2021 by the Monde de l’Epicerie Fine jury.  We are members of the Slow Food Basque Country Biziona movement.
