Natural albacore tuna fillet flavored with bay leaf. Albacore tuna (or white tuna), is the noblest of the tuna species fished between June and October. Laurel: a typical aroma of French gastronomy brings the sun flavor by diffusing the essential oil contained in its sheets. These are also famous for its properties medicinal. Our fillets are prepared and dressed by hand. Lacking of ridges they are the thinnest, noblest part of the tuna. Natural and just flavored with bay leaf, this recipe is very little salted to preserve all the flavor of the fish wild and let express the freshness of laurel. No additives, dyes or other perlimpinpin! The tuna comes mainly from the auction of Saint Jean de Luz- Ciboure in the Basque Country. JEAN DE LUZ CANNING IS: An organic, artisanal and local cannery. All our ingredients are sourced less than 250km from our Saint Jean de Luz workshop.
