
The star of Jean de Luz from the Auction of Saint Jean de Luz! These sardines have reached their adult size and are caught in winter with purse seine nets (near the coast) in France in the Bay of Biscay. They are larger and less fatty than the sardines we usually find. The sardines are prepared by hand using the oldest method, dating back to 1804 (the era of "Penn Sardin"): they are first salted and then dried for three days before being placed raw, by hand, in jars. This way, they retain all their flavor. They are not fried, which makes them more digestible. The organic olive oil comes from a small mill in Navarre, south of Pamplona. It is prepared with Empeltre variety olives. Sardines, organic extra virgin olive oil, a pinch of salt, the chili sardines are seasoned with organic Espelette PDO chili pepper which spices them up very slightly. No additives, no colorings, no other nonsense! A 270g jar is equivalent to approximately 3 standard cans. It can be resealed and stored for 1 month after opening in the refrigerator. -JEAN DE LUZ CANNERY IS: An organic, artisanal, and local cannery. We are French artisans and proud of it, in fact the production of all our products is done manually in our workshop in Saint Jean de Luz in the Basque Country (New Aquitaine). And we are proud to have (re)localized traditional artisanal know-how. A local approach. Located 6 km from the Criée de Saint Jean de Luz, our supply is wild (fish), organic and local. All our ingredients are sourced within 250km of our workshop. Committed to a zero waste and zero plastic approach, our packaging is 100% recyclable (and our cardboard recycled).
