
DOMAINE MARGUERITE CARILLON Chablis 2022 History Domaine Marguerite Carillon is the flagship of Maison François Martenot. Majestic, sitting on the heights of Meursault, it symbolizes the richness and diversity of Burgundy through a beautiful selection of Regional, Village, 1er Crus and Grands Crus appellations from Chablisien, Côte de Nuits and Côte de Beaune. Chardonnay Grape Origin Located in the north of Burgundy, near Auxerre, the Chablis vineyard runs along a small river with a predestined name: the Serein. Winemaking Traditional winemaking. The grapes are pressed on arrival at the winery in pneumatic presses. Alcoholic fermentation takes place in thermo-regulated stainless steel vats. The wines are aged on fine lees for 8 to 10 months. Type of soil The Chablis region is a limestone plateau cut by valleys. This limestone is called "Kimmeridgian" and contains marine fossils in a whitish cement (ocean bottom). It is this marine nature which gives this unique minerality to Chablis. Tasting: Color: Pale yellow color, clear and brilliant. Nose: Open nose, with aromas of white fruits with a beautiful minerality which brings complexity. Palate: The mouth has good tension with balance remarkable and a lemony and fresh finish. Recommendations Perfect with hot oysters, fish in sauce, but also white meats in sauce (veal, poultry). Sushi goes perfectly with its minerality. Goat cheeses, Blues and Comté. Services 10 - 11°C
