Serve at 14°C with white meat, fish and shellfish in cream sauce, as well as asparagus mousse, a cocotte egg with white truffle or foie gras and fig confit. It will also be delicious with a praline, frangipane or white chocolate cake or an apricot tart. Catherine Delaunay suggests pairing it with smoked salmon and dill foam or langoustine cannelloni with Espelette pepper cream.
