White Wine - We don’t suffer – Wine without added sulphites AOP Languedoc

The production of these wines requires more commitments and demands, so they give you the possibility of tasting wines open to the fruit and which reveal all the subtleties of our terroir. Traditional winemaking Historical In 2018 we launched into no added sulphites with a Languedoc Rouge cuvée to meet the growing demand of our customers. 
With the 2019 vintage we have available it in three colors.   A little science Sulfites, also called sulfur dioxide or SO2, are preservatives used in the food industry and oenology. 
Sulfur dioxide has an antioxidant and antiseptic action. 
In fact, sulphites reduce oxidation phenomena and help destroy micro-organisms. 
The addition of sulphites can occur at each stage of production: during the harvest, alcoholic fermentation and bottling.
 Our method Producing a wine without added sulphites requires rigor and impeccable hygiene. 
The quality of the grapes is also essential and the selected plots are always in perfect health. 
The harvest is carried out before 10:00 a.m. to limit the impact of the heat on the grapes. 
The alcoholic fermentation begins very quickly.   We have decided to control the alcoholic fermentation stage by using selected yeasts which produce very little sulphites. 
Malolactic fermentation is also carried out whether in red, rosé or white to ensure microbial stability of the wines. 
As soon as the fermentation processes are completed, the wines are stored at low temperature and bottled quickly in order to preserve their aromatic freshness. 
The cap we use also guarantees maximum oxygen permeability.   Finally, in all stages of aging and packaging we protect the wines from oxygen to avoid oxidative deviations.
 Result All these precautions mean that you will also find a taste advantage in consuming sulphite-free wines.

Paradoxically you can taste them even the day after opening.
