White Wine - L’Estabel in AOP Languedoc

White Estabel, as an Aperitif (Kir or plain) or with shellfish For transport: 2 boxes = 1 sales unitDescription Over the last million years, this source has given rise to a massif of tuffs one kilometer long and 300 meters wide. 

It dominates by around thirty meters the Boyne, a tributary of the right bank of the Hérault which crosses Cabrières from north to south. 

Nowadays, this flow is channeled, the Estabel plateau is therefore no longer subject to flooding.   On either side of this canal, the vineyard, covering around fifteen hectares, facing the Pic de Vissou, is located on very differentiated soils. 

The choice of rootstocks and grape varieties is made according to the nature of the soil. 

Thus, Clairette behaves better on very limestone soils (Lieu-dit Les Tabels) while the other grape varieties: Cinsault, Carignan, Grenache and Syrah prefer schist soils, the most widespread in Cabrières (Lieu-dit Les Moularesses). Estabel has been a registered trademark since 1952, often associated with vermeil wine (bright red) which traditionally defined the color, but also the quality of wines from the 12th century. 

The first bottles of rosé wines marketed by Cabrières winegrowers in the 1950s bore the mention: L’Estabel Vin Vermeil. 

Since then, this tradition of quality has been perpetuated in the three colors of Estabel: L’Estabel blanc, L’Estabel rosé, L’Estabel rouge.   View: Beautiful pale gold color with green highlights.

 Nose: White flowers, very sweet and pleasant.

 Taste: Supple and fruity on the palate with good liveliness on the finish. 

The whole thing is pleasant and fresh.   Terroir: Shale hillsides.

 Grape variety: Clairette, Grenache blanc, Rolle.

 Vinification: Grapes picked before full maturity, juice obtained by draining with settling, with fermentation at 17°C.

 Aging: In lined concrete vats.

 Bottling: End of winter following harvest.

 Storage: Best consumed in the first year. 

Then evolves into notes of honey appreciated by connoisseurs.

 Gastronomy: Serving temperature: 7 to 10°C.
