L'Hermite - Marc de Bourgogne Hors d'Age

At the start of our project, we poked around at our friend Mathieu Sabbagh's, the last traveling still in Burgundy. At the bottom of its cellar, the last cask we tasted blew us away. This 19-year-old Marc, certainly from Pinot Noir, is bottled raw from the cask, unfiltered, without reduction in water. It develops aromas of plum, ume, Spanish wines such as oloroso, or palo cortado. Be careful, it's very aromatic! 47.2% / Vol
