
Château Romanin's Marc de Provence is aged in oak barrels for five to ten years in the cathedral cellar like a solera. The solera is a technique which consists of promoting the blending between very old vintages and younger ones during aging. At each bottling, the barrels are emptied to less than a third of the container and are topped up with brandy. The barrels thus retain a tiny proportion of the oldest vintages. The advantage of the solera is to produce marcs of regular quality of a year to year, often complex and blurred. The color is golden with brilliant and amber reflections. The nose is powerful, slightly woody, with beautiful notes of apricot and garrigue. Scents of cedar and walnut shell complete this complex aromatic palette. The mouth is full and fine. Gingerbread, almond, hazelnut are in harmony with the notes of bitter oranges and tangerine zest which bring a certain freshness to the palate. This marc blossoms in a barely roasted register, revealing a warm and generous vanilla finish.
