After a long and careful path, once the fruit has been obtained, exclusively from our farms, our mission has only just begun...we began to make Isbilya: Olive harvest in mid-October. Thus, an increase in fruitiness is achieved (organoleptic characteristic in the tasting that is reminiscent of that of healthy and fresh olives).
