625g Loins of Bonito del Norte (Thunnus alalunga) fished with a rod, during the summer months on the coast of the Cantabrian Sea. Upon arrival at the port in Santoña, it is cut up fresh, and after lightly cooking, it is cut into cubes and packed in cans with olive oil. Spectacular texture and ideal for salads.
