Lomo bellota is the noble part of the Iberian pig. Preservation preferably between 0 ° and 5 °. These pigs are reared in the open, feed on acorns of "bellota" oak. The lomo is marinated with salt, pepper and spices, it is then dried for a minimum of 6 months. The artisanal production gives this intense flavor, a melting texture, a unique taste.
