Fennel seeds have a light green color, a mild aniseed flavor and are featured in a myriad of Mediterranean and Asian cuisine. They work particularly well in salads with cabbage or root vegetables, for light types of meat and preferably in combination with other spices and herbs. The sweet and fresh taste of licorice / anise also goes well with fruit in brine, as well as with seafood. The seed also works wonders together with ripe citrus fruits, eg. dressings, salads and sauces. The spice plays a significant role in Chinese five-spice powder along with star anise, Sichuan pepper, cinnamon cassia, and cloves. Feel free to use fennel along with coriander, tarragon, or thyme to rub on delicate meat before roasting or grilling.
