
The Tonka bean is the almond, the kernel, of the fruit of a large tree, the Brazilian teak, found in the West Indies and Central America. Just like vanilla, it develops its flavors after a drying time of several months. The bean then takes on a black color, wrinkles, and becomes hard like a small fossilized rock. We offer on our shop Tonka beans from a Brazilian producer, from the Pará region in the north of the country. The Tonka bean is a gourmet spice. It has a smell reminiscent of bitter almond, with a woody side, full of roundness, and vanilla flavors also whose aroma is very close. The Tonka bean is a real treat for dessert. It goes wonderfully with chocolate, caramel or coffee, bringing a flavor of “caramel Carambar”. Infused in a homemade sugar syrup, it develops its woody aromas to accompany a fruit salad, pancakes or a cocktail.
