
Capocollo is similar to what we know under the name "Coppa" and which we find in Corsica and Northern Italy. Produced only with Italian meat with guaranteed supply chain certification. Our capocollo is made from the neck part of the pig. Salted and seasoned with pepper, spices and herbs, it remains in brine for about 12 days and is massaged daily.
