
Discover our mushrooms in olive oil grown in the San Severo region (Gargano, Puglia, Italy). These Italian “gilled” mushrooms (oyster mushrooms) are gray/brown in color and oyster-shell shaped. Their flesh is firm and elastic and the taste is fine and slightly woody. They are generally harvested from stumps or dead wood and then blanched in a mixture of boiling vinegar water. Finally, they are drained, dried and then marinated in virgin olive oil.
