Graviera (γραβιέρα) with feta are the most popular cheeses in Greece. Despite being relatively unknown abroad, its texture and taste give it a unique character. It is reminiscent of tomme, Gruyère and French Comté at the same time, with a more or less tender texture depending on its ripening and its origin. The version of Nikos Memmos is rather tender and slightly spicy, ideal for your toasted sandwiches, aperitifs or even baked with other ingredients.
