Mizithra is a type of traditional cheese made from sheep's and goat's milk and whey. Its taste is similar to that of manouri, generally brackish and with a rather strong farmy taste. It exists in 2 forms, soft, called “fresh” and hard, called “dry” (equivalent to ricotta fresca and ricotta salata). The hard mizithra, which Nikos Memmos provides us, is usually salty, we eat it grated or in shavings on pasta, salads or grilled vegetables.
