Made in Puglia, this dry, low-fat goat cheese has quite the character! It brings an incredible flavor to pasta, salads and can also be eaten without moderation. This dry and salted ricotta is made from fresh ricotta which is steeped, drained for a few days, then salted with coarse sea salt. Once refined, it can be kept at the bottom of the fridge. It has a taste that is both delicate and pronounced, a compact but tender white paste, and has almost no crust. Like feta, this equally light Greek cheese, it does not melt.
