Domaine Augustin Adéodat Red 2020

At the harvest, after having picked up the Grenaches gris, we pick up the Grenaches noirs, the Carignans and other Mourvèdre, Counoise or Cinsault. The complantation does not allow us to know the exact proportion of each of the grape varieties. However, we estimate Grenache at 85% and Carignan at 15%, the other grape varieties being anecdotal. Once in the cellar, despite rather long macerations, we do not turn these little grapes into monsters of concentration, an advantage of punching down. Aging in barrels accompanies these juices for 18 months.
