Palacio Oliaxi is a family business based in the area of the Estepa region, in La Roda de Andalucia, Seville. We are producers of high quality Extra Virgin Olive Oil. It is an area that is strategically exceptional due to the weather conditions that exist, and the quality of its soils. In addition to all this, we take special care in harvesting the olives, which is done at a controlled temperature at all times. The oil is from the first cold extraction and we sacrifice quantity for quality in the milling process, obtaining a superior quality oil.

Our oil is called ""We, the legend"", and it is ecological (Certified by the CAEE), of 2 different varieties: hojiblanca and picual. We collect the olive on full moon nights, because that is how they originally did it in Ancient Rome, the first legendary collectors. But we also do it this way, because it is scientifically proven that it is on these full moon nights, when the optimum ripening point of the olive occurs.
