The Aubocassa (Albocasser) farm is in Mallorca (Balearic Islands) in the municipality of Manacor, to the east of the island, one of the few places where the flavor of agrarian Mallorca has managed to endure over time.
What really moved us when we arrived at the wonderful world of oil from the complex universe of wine was how an insignificant fruit can create such a magnificent liquid inside itself, ready to be consumed. It is the only vegetable fat in the world that can be consumed without having to be chemically processed.
