OLEOVITE.-Green Oil is also known as "early harvest olive oil", "early oil", "Premium oil" or "first day harvest oil".
It occurs between the months of October and November, when the olive has not reached full maturity and is still green in color. Early harvesting depends a lot on the weather, the variety of olive and the terrain where the olive trees are found. The more the olives ripen, the less antioxidants they retain.
The result obtained from green olives is an intense green olive oil, which perfectly matches its spiciness, sweetness and bitterness.
