A preliminary preparation to concoct a delectable Demeter bread. This alchemy turns out to be a tasty blend of ancient wheat, poppy flour and poppy seeds. Our French flours are freshly ground on an Astrié mill, a mill which allows us to obtain the best quality flour, as efficiently as possible. With an extraction rate of at least 80% in a single pass, the flour is neither heated nor oxidized. This effectively produces flour of exceptional nutritional finesse, a true reflection of our wheat or cereals.
