A unique blend of two different sievings of the same natural, vegetable flour to bring flexibility and support to your pizzas. Our French flours are freshly ground on an Astrié mill, a mill which allows us to obtain the best quality flour, as efficiently as possible. With an extraction rate of at least 80% in a single pass, the flour is neither heated nor oxidized. This effectively produces flour of exceptional nutritional finesse, a true reflection of our wheat or cereals.
