Sweet Alsace mustard is produced by Alélor, the only mustard factory in Alsace. It is appreciated as much for its softness as for its fine and creamy texture. Sweet Alsace mustard is the flagship product produced by Alélor since 1873. It is the traditional mustard of the Alsatians and the essential accompaniment to Alsace sauerkraut. White mustard seeds are added to the black mustard seeds before being ground on a corundum stone wheel. White mustard seeds are less pungent and add creaminess to mild mustard. Alélor supports local agriculture in collaboration with the Alsace Chamber of Agriculture.
