Bean-to-bar means that the processing of the cocoa from the bean to the bar is in the hands of a chocolate maker. This guarantees transparency, traceability back to the origin and benefits the cocoa producers. Through direct trade, i.e. direct purchase on the farm or from cooperatives, cocoa farmers can be paid significantly higher prices for cocoa than usual.
