Caught off the coast of St Gilles Croix de Vie in Vendée, vintage sardines are selected for their high fat content of over 12%. A tradition maintained since 2004 where the sardines are prepared and packed by hand in the hours following fishing. This recipe is above all a sardine for keeping that must be left to age, turning it every six months to allow it to preserve and enhance its gourmet notes. Mademoiselle LULU ventures into the heart of space, always in search of new discoveries. There she rubs shoulders with the moon and the stars of course, and also with curious fish imagined by Coralie JOULIN.
